WHAT'S THE BEEF?

The top round (London Broil) is cut from the inside of the leg muscle, opposite of the bottom round. This cut is more tender than the bottom round and less tender than the eye of round.

Top Round is good for the use of making beef jerky because it is very lean, flavorful and best for slow cooking.

BLACK ANGUS CATTLE

Angus is a breed of cattle commonly used in the production and consumption of beef. The breed is tough and survivors of the harshest winters. They are medium sized and have large muscle content.  Angus cattle were specifically bred in Scotland by Hugh Watson in the mid-nineteenth century and by 1880 black Angus was brought to America, now being the most popular bred cattle.
